Lightly grease 8 x 9 in. square baking dish.
Layer 4 tortillas, enchilada sauce, meat and rice.
Layer 4 more tortillas, balance of meat, rice, enchilada sauce and cheese.
Cover with foil and bake at 350 for 30 minutes; uncover and continue to bake for 5 more minutes to brown. Cut into 4 servings. Can be served with bean, corn or both.
