  1. Cook 4-6 servings of rice and put aside. Mix diced green chiles with sour cream and salt to taste. Layer in casserole dish the rice, then Mozzarella cheese and last layer sour cream with chile mix. Repeat layers and end with a layer of rice. Bake at 325 degrees for 30-45 minutes. The last few minutes, sprinkle cheddar cheese on the top and let melt. Very easy and very good!
