  1. Place apricots in a deep dish pie plate or 8” x 8” x 2” microwave safe pan. Sprinkle fruit with lemon juice. Mix remaining ingredients together with fork until crumbly. Sprinkle over fruit. Microwave uncovered for 7-10 minutes, on high. Check to see if the fruit is tender. Let stand uncovered for 10 minutes. Serve as is or with a scoop of vanilla ice cream.
