- 1 cup Chopped Pecans
- 1 pkg. Yellow Cake mix
- 1 - 3 3/4 oz. Jello instant vanilla pudding mix
- l/2 cup Cold Water
- l/2 cup Wesson oil
- l/2 cup Bacardi dark run

- Directions: Preheat oven to 325 degrees. Grease and flour a 10” tube pan or 12 cup bundt pan. Sprinkle nuts over bottom of pan. Mix all cake ingredients together. Pour batter over nuts. Bake 1 hour. Cool. Invert on serving plate. Prick top and drizzle and smooth glaze evenly over top & sides. Allow cake to absorb glaze. Repeat until all the glaze is used up. For Glaze: Melt butter in sauce pan. Stir in water & sugar. Boil 5 minutes, stirring constantly. Remove from heat. Stir in rum.
- Optional: Decorate with whole maraschino cherries & border of sugar frosting or whipped cream. Serve with seedless green grapes dusted with powdered sugar. This cake is the most requested cake by the nursing staff.
